California Raisin packers have been selling to the confectionery
industry worldwide for decades, and have developed customised
specifications for panning and other confectionery processes. These
include oil coatings and various sizes of raisins.
Confectioners around the world, even those in other raisin growing
countries, source raisins from California because of the firm
skins. The firm skin of the California Raisin holds up to the
panning process and will not break or cause uneven distribution of

California Raisins are grown in the San Joaquin Valley, within a 70
mile radius of a town called Fresno, California. Temperatures can
stay at over 100°F (38°C) for weeks on end. The valley lies between
the Sierra Nevada mountains to the east and the coastal range to
the west. The soil is rich in potash which is ideal for growing
grapes and quality raisins.
The grapes are harvested in August/September and left to dry in the
baking sun for 3 weeks. During drying, the hot sun bakes the grapes
and caramelizes the sugars, giving California Raisins their
distinctive flavour and colour. The raisins then undergo a thorough
cleaning process and are packed and shipped around the world.
